Fermentation occurs with indigenous yeasts and ageing is on lees in 600L wooden barrels (demi-muids) for around six months

this was split between tank and a seasoned 2000L foudre for wild ferment

and it now makes up 40% of the blend

perfectly balanced by a lot of freshness and liveliness thanks to a beautiful tension

averaging less than 10 inches on top of the volcanic bedrock
